Using a classroom-friendly approach, the text covers the core content of the food system and provides evidence-based perspectives reflecting the tremendous breadth of issues and ideas important to understanding today's US food system. This textbook is rich with illustrative examples, case studies, activities, and discussion questions. This textbook is a project of the Johns Hopkins Center for a Livable Future (CLF), and builds upon the Center's educational mission to examine the complex interrelationships between diet, food production, environment, and human health to advance an ecological perspective in reducing threats to the health of the public, and to promote policies that protect health, the global environment, and the ability to sustain life for future generations. Issues covered in Introduction to the US Food System include food insecurity, social justice, community and worker health concerns, food marketing, nutrition, resource depletion, and ecological degradation. This textbook also presents concepts on the foundations of the US food system, crop production, food system economics, processing and packaging, consumption and overconsumption, and the environmental impacts of food. The internet is rife with biased and unsubstantiated claims from the organic industry, and the treatment of issues such as food safety and quality by the media ('if it bleeds, it leads') tends to have a negative impact on consumer perceptions about conventional food. Until recently, more and more consumers in many countries were opting to buy organic food over conventional food, resulting in a radical shift in food retailing. This was due to concerns over chemical residues, food poisoning resulting in recalls, food scares such as 'mad-cow' disease, issues like gene-modified (GM foods), antibiotics, hormones, cloning and concerns over the way plants and animals are being grown commercially as food sources. As a result there has been an expansion of the organic industry and the supply of organic foods at farmers' markets, supermarkets and specialty stores. Remaking the North American Food System examines the resurgence of interest in rebuilding the links between agricultural production and food consumption as a way to overcome some of the negative implications of industrial and globalizing trends in the food and agricultural system. Written by a diverse group of scholars and practitioners, the chapters in this volume describe the many efforts throughout North America to craft and sustain alternative food systems that can improve social, economic, environmental, and health outcomes. With examples from Puerto Rico to Oregon to Quebec, this volume offers a broad North American perspective attuned to trends toward globalization at the level of markets and governance and shows how globalization affects the specific localities. The contributors make the case that food can no longer be taken for granted or viewed in isolation.
