Abstract / Summary
This project was initiated in 1997. Its aim is to chart the revolutionary changes which have occurred within Britain's food industry in the course of the twentieth century and beyond. The technological and social changes which have affected the production, distribution and retailing of food are explored through recordings with those working at every level of thee industry. Interviews to date cover amongst other areas, the fields of butchery and chocolate production, biscuit production and aspects of 'ethnic' food in Britain.
